Trail Chef: Crazy-Easy Craisin Chicken

Crazy-Easy Craisin Chicken
Serves 2
• 1 packet instant chicken broth
• 7-ounce pouch of precooked chicken
• pinch red pepper flakes
• pinch nutmeg
• 3 pinches thyme
• salt and pepper to taste
• ¼ cup dry white wine (save the rest of the bottle to serve with dinner)
• 1 cup couscous
• pinch of allspice
• pinch of cinnamon
• ½ cup craisins
• ¼ cup walnuts
• drizzle of honey
After bringing one cup of water to a boil, add the couscous, allspice, cinnamon, and craisins to the pot. Cover and remove from heat. In five minutes fluff with a fork and add the walnuts and honey.
While your stove is still burning, bring ½ cup of water and the packet of broth to a boil. Add chicken, red pepper flakes, nutmeg, thyme, and salt and pepper. Cook for eight to 10 minutes. Then add white wine, and let simmer until pot is mostly dry. Remove from heat and serve over your couscous for a delicious, easy meal.
