Plain and simple: Good desserts make for sweet memories. Give your campmates something to remember with this backcountry take on tiramisu, the gourmet, coffee-flavored Italian dessert. Layer upon layer of white chocolate, instant espresso, and Kahlua sandwich between moist ladyfingers to create a dessert so decadent you’ll probably dream about that night. Best part? It’s as easy to make as it is delicious. Up the fancy factor: Use your pocket knife to shave some flakes of dark chocolate for a topping. Manga! 3 servings
1/3 cup water
2 teaspoons instant espresso powder
2 tablespoons Kahlua
1 3.4-ounce packet instant white chocolate pudding
2 cups milk (rehydrated from 2/3 cup powdered milk)
16 ladyfingers
Dark chocolate
In camp ➞ Heat water to a boil, then mix in espresso and Kahlua. Make pudding according to package directions. Place six ladyfingers in the bottom of a pot; drizzle with half the espresso mixture, then spread half the pudding over it. Repeat to form a second layer. Use a pocketknife to shave thin strips of chocolate on top and serve. Spoon onto plates, or eat it straight from the pot.
