Recipe: Green Mountain Grasshopper Dessert

Ingredients:

1 (3.4-ounce) package pistachio-flavored instant pudding mix

3⁄4 cup nonfat powdered dry milk

9 Oreo cookies, broken in pieces (or 1 cup of Mini Oreo cookies)

6 teaspoons crème de menthe liquor

1⁄2 cup cold water per serving, added on the trail

Preparation at home:

Into each of 3 separate quart-size freezer bags place 3 tablespoons of pudding and 1⁄4 cup milk. Carry cookies and crème de menthe separately. (The small “personal-size” plastic bottles, as used on airplanes, are ideal for carrying liquor on the trail.)

Preparation on the Trail:

To make 1 serving, add 1⁄2 cup cold water to 1 bag of pudding mixture. Shake vigorously for 1 to 2 minutes. Allow to set for at least 5 minutes. Impress your friends by artistically topping your pudding with 3 broken Oreo cookies and 2 teaspoons of crème de menthe. (If you are feeling generous, let them lick the bag.)

Tip:

For a nonalcoholic version, use crushed mint candies or substitute with Mint ’n Creme Oreo cookies.

Authors’ note:

It is important to use cool water with recipes requiring thickened instant pudding mix. If the water is warm, the mix may not congeal properly.
