If you’re a hiker who spends any time on social media, you’ve probably seen this video recently: A woman skewers a round of Babybel cheese, then roasts it over a campfire until it’s melty, gooey, and extremely appetizing. Then she glops it onto some crackers, tops it with spicy pepper jelly, and downs the whole messy thing, s’more-style.
Over the past few weeks since this video went viral, I’ve seen copycats everywhere. We here at Backpacker have one thing to say: told you so. Our editors caught some flak when we promoted this funky take on a campfire classic back in 2012, but it seems like everyone is finally jumping on board with the savory s’more.
To celebrate, we’ve come up with some ideas for twists on the classic. Some guidelines: To be considered a s’more, a treat needs three elements. First, a main filling that can be roasted over a fire, like a marshmallow or hunk of cheese. Second, an unroasted element, like chocolate, to add some flavor contrast. And lastly, two sturdy exterior components to contain it all as a handheld bite. The possibilities to mix and match may be endless; here are the combos we’re packing for our next campfire.
The Pizza Bagel S’more
Bagel chips + tomato sauce + roasted sliced mozzarella
The Juicy Pig
Cheese crackers (we like Beecher’s) + sliced prosciutto + roasted peach wedge
The Breakfast S’more
Melba toast + sliced cheddar + fire-roasted bacon or sausage
Campfire Charcuterie
Water crackers + apple slices + roasted brie
The Après S’more
Ritz crackers + cornichon + roasted raclette
The Halloumi S’more
Pita crackers + hummus + roasted halloumi
