1 tablespoon oil
2 small potatoes, diced
1 small onion, diced
1 clove garlic, chopped
8 ounces summer sausage, cubed
Salt and pepper

Heat oil over medium heat, add potatoes and onion. Pan fry for 10 to 15 minutes, until browned and soft. Stir in garlic and sausage and keep over heat until sausage is
warmed through. Divide onto plates, and add salt and pepper to taste. (Serves two)

Prepare this quick-and-easy dinner after a long day on the trail.

2 cups water
1 3-ounce package beef Ramen noodles
2 tablespoons dehydrated peas
2 tablespoons dehydrated carrots
4 ounces summer sausage
2 fresh green onions

Boil water and add ramen noodles (per package directions). When there’s 4 minutes of cook time remaining, add dehydrated vegetables. Chop summer sausage and mix into the
soup. Slice green onions and sprinkle onto soup before serving. (Serves one)

Add jerky to this Southern-comfort classic for a hike-fueling breakfast.

2 cups water
1/2 cup instant grits
2 tablespoon margarine (or butter)
2 to 4 ounces beef jerky, chopped
6 ounces cheddar cheese, shredded
Salt and pepper

Melt margarine over medium heat in a pot, and add beef jerky, stirring to coat and soften the bacon-bit-sized pieces (approximately two to three minutes). Set the jerky
aside and use the same pot to boil the water. Add the grits to the boiling water, lower the heat, and continue stirring until the grits thicken to an oatmeal-like
consistency. Remove from heat, stir in jerky, cheese, and salt and pepper to taste. (Serves 2)
