Ramps 'n' Grits

2 ramps (wild leeks), white part only, minced, or substitute 1 clove garlic, minced, plus 3 scallions (white part only), chopped
4 packets instant grits, plain or bacon
1 teaspoon vegetable oil
2 cups water black pepper to taste
In Camp
Fry ramps (or garlic/scallions) in oil until fragrant. Add water and bring to a boil. Whisk in grits and season with pepper. Serves 2.
