Trail Chef: Thai Sesame Noodles

This flavorful meal has two secrets. One, pack fresh veggies in paper bags to allow them to breathe (they’ll last longer.) Two, those little packets of red pepper flakes from Pizza Hut are perfect for this recipe (and free!). Trust us–it’s hard to get Thai food in camp that’s cheaper, tastier, or easier.

Thai Sesame Noodles

Serves 4. Recipe by Cindy Crosby.

Knorr-Lipton Asian Sides Thai Sesame Noodles pouch

7-ounce pouch chicken (such as Tyson Premium Chunk Chicken Breast with Rib Meat)

1 tablespoon olive oil

7 fresh baby carrots

Half of a small red bell pepper

1 to 1½ cups water

1 teaspoon coarsely ground black pepper

Red pepper flakes, to taste

At home: Pack veggies in paper bags. Transfer oil to a spill-proof container and place black pepper in a zip-top bag.

In camp: Slice carrots lengthwise and dice red bell pepper. Heat oil over medium heat. Sauté carrots and red pepper until tender; add chopped chicken, coat with red pepper flakes and black pepper, and heat until hot. Add water, cover and bring to a boil. Add noodles. Simmer, covered, for 7 minutes. Let stand for 3 minutes and enjoy.
