Best way to update a classic? Make it lighter. Spyderco shaved the weight to 2.5 ounces by changing the handle to fiberglass-reinforced nylon. The material feels, well, cheap, but its multidirectional pattern kept our hands firmly planted on it in all conditions. There are serrated and non-serrated versions; both lock open with a reassuringly loud click. The 3-inch handle is long enough to fit all our fingers while slicing, and it’s wide enough (about an inch) to work it without fatigue. Bonus for lefties: The clip can be moved to either side of the knife and positioned tip up or tip down. spyderco.com
