I would suggest, before the trip, crumbling a bunch of those cookies and creating, with the espresso mix (a little will do) a cookie layer like the graham cracker layer with cheesecake. I think it'd work out great! Fantastic recipe!

Tried with a few changes. Made with Nabisco shortbread cookies, 3 teaspoons of instant coffee instead of instant expresso and used vanilla pudding packs.
