16 oz. can refried black beans
4 oz. can diced green chiles, drained
4 oz. block Monterey jack cheese, cut into 4 sticks, lengthwise 2 extra-large flour tortillas, at least 12 inches across
2 18-by-24-inch sheets each, parchment paper & aluminum foil
Spread half of the beans in a 6-inch circle on each tortilla. Spread half of the green chiles in the center of the beans. Place two sticks of cheese in the middle. Beginning at the bottom, fold the first 2 inches of the tortilla over the fillings, then roll up as you tuck the sides in (for a complete demo, go to backpacker.com/burrito). Securely wrap each burrito, seam-side down, in parchment, then foil.
Once you have a nice bed of coals, move big chunks of wood aside and put the foil-wrapped burritos right on the coals. Place a couple burning logs on top. Wait 10 minutes. Using a pair of sturdy sticks, flip the burritos once, cover again, and wait another 5 to 10 minutes. Remove with sticks.
