Time-Saving Recipes: Kendall Katwalk Chicken and Dumplings

Scenario: The camp cupboard is bare, but the fridge is full of leftovers. Solution: These tasty dumplings.

Scenario The camp cupboard is bare, but the fridge is full of leftovers.

Solution Kendall Katwalk Chicken and Dumplings*

7 ounces leftover chicken
2 1/4 cups Bisquick
1 teaspoon dried parsley
3 teaspoons chicken bouillon
1 tablespoon dried veggie flakes
1 tablespoon dried onion flakes
1/2 teaspoon celery salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme

At home Put the Bisquick and parsley in a zip-top bag. Freeze the chicken in a second bag; put the remaining ingredients in a third.

In camp Boil three cups of water, add contents of third bag, and simmer. Slice and add chicken. Make dumplings by adding 2/3 cup of water to Bisquick. Seal and squish to mix. Snip off corner of bag and squeeze dough into soup. Cover until dumplings float to top. Serves two.

Scenario No grocery in sight, only a gas-station convenience store

This is delicious and satisfying... but I found there to be too much bisquick. I used the leftovers to make biscuits in the morning, pretty awesome!
