Recipe: Easy Pad Thai

Craving something Asian on your next trek, but don't want to put in a lot of effort? Try this easy Pad Thai.

3 packages ramen noodles
7-ounce chicken breast pouch
1 cup shelled peanuts
1/2 cup Asian sesame dressing (use Newman's Own Asian Sesame Natural Salad Mist, which comes in a pack-friendly, 7-ounce plastic bottle)

At Home
Crush peanuts into pieces with the bottom of a bowl or mug. Pack in a zip-top bag.

In Camp
Boil water, cook ramen noodles and drain (save the seasoning packet and add it to soup or rice). Stir the chicken and dressing into the pot and cook for one minute. Sprinkle crushed peanuts over the noodles, then serve.

We love this!!! we have spent 2 months in Thailand in the last 5 years, and whether this tastes like "real" Pad Thai, or not, it's is quick, easy and tastes Great. It's easy to add whatever is handy to change it up a bit, ie... 1/2 tsp crushed red peppers or a different dressing etc...

It dosent do justice because its called Easy Pad Tai, not Gourmet Pad Tai

Yes, throw sesame dressing on some noodles and call it pad thai. Such a disservice to pad thai. Maybe call it easy sesame noodles. Or easy peanut noodles. But this recipe has NOTHING to do with pad thai.
