Recipe: Salmon-Tomato Couscous

Salmon jerky and curry powder are key to this hearty dish.

Salmon-Tomato Couscous (Justin Bailie)

1 1/2 cups sun-dried tomatoes, chopped 

2 cups instant whole-wheat couscous

6 ounces salmon jerky, shredded

1/2 teaspoon curry powder

1/2 teaspoon salt

1/2 teaspoon black pepper



At Home 

Place curry powder, salt, and pepper in a zip-top bag.


In Camp

Place the tomatoes in a pot and cover with three cups water. Bring to a boil and cook for two minutes. Remove from heat, add the couscous, stir, and cover. Let sit for five minutes, or until all the water is absorbed. Remove lid and stir in the curry powder, salt, pepper, and salmon. 



Prep time 2 minutes
Cook time 8 minutes

I tried this on a recent trip. The only sub I made was buying salmon in a pouch instead of the salmon jerky (couldn't find any). The flavors were good except the salmon was really gross. It had an almost-tuna taste. If I find salmon jerky I will try this again.

It's a good costal dish, I know a few people that make salmon jerky out of any fish they catch. If you've got that hook-up it cuts the food cost by alot

It didn't cost me that much; I used a package of salmon rather than the salmon jerky and also found it would feed three at most. Package of salmon $3; the couscous about $1; same for the sun dried tomatoes. I get it at $6 total.

6 bucks a serving is a lot. Salmon is expensive. But tasty! Good dish friends.
