I am a backpacker and mountain climber and am trying to find out more information specific to diet and keeping up my endurance, energy and strength. I have celiac disease and there doesn't seem to be a lot of information on obtaining the right carbs.

What little I know about celiac disease can be summed up with these words: you need a gluten-free diet. When you were diagnosed, your doc should have made suggestions about how to eat gluten-free while maintaining more than enough energy and strength. Your doc, he or she, will be a much better source of info that I am.
