When heating up a meal that is potentially messy to clean up, I line the pan with heavy-duty aluminum foil. Clean-up is a lot easier than scrubbing any burnt particles on bottom.
It's always good to take along necessary utensils-- a whisk, a spatula, a microplane grater, etc.-- depending, of course, upon your menu.
Bring along some heavy duty aluminum foil. Use it to cook your fish or cook up pancakes without adding weight to your pack.
I carry a pack of tortillas with me. They make a great 'edible' dinner plate. No dishes to wash.
