P&J is for amateurs. This spiced up sandwich is just what your taste buds need on the trail.

2 ciabatta rolls, halved
1/2 tablespoon dried cilantro
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/ 6 teaspoon chili powder
8-ounce can corn
Salt and pepper
7-ounce chicken- breast pouch
1/2 cup grated Parmesan cheese
4 1-ounch ranch dressing packets
1/4 cup crumbled bacon
At home Drain corn and double-bag in zip-top bag. Spoon spices
into another zip-top bag; shake to combine. Place bacon pieces and Parmesan
into two separate bags.
In Camp To make one sandwich: Mix chicken, corn, bacon, and
Parmesan in a bowl. Stir in ranch dressing and spices. Spread half on a roll.
Why not use freeze dried corn, cook and let cool? Also what about pita bread rather than the folls? Both will save some weight. Posted: Feb 23, 2010 roger
